Will 16X10 rims fit on a stock height 08 f250? if so what size tire can you fit?

I believe the minimum rim size you can run on a 08+ is an 18"

the stockers are 16"

Yep. 05+ is 17" or larger due to the larger brake caliper.

Actually, the smallest is a 17. 16's were for years prior to 05 with leaf spring front end.
