Low Oil Pressure At Idle/Blown Head Gaskets

I have a 2 (actually 3) part problem. I have been battling heating and cooling inside the cab. In the winter I couldnt get heat, now I have to drop the temp to 60* just to blow cool air. I noticed last month when towing My ECT's started spiking - up to 230, then back down to 190. Burned through 2 gallons of coolant on a 3 hour tow. I know I have a blown gasket (saw water leaking from the head on the pass side of truck).

Recently ran into a new problem. The truck is having a really hard time starting - and when at idle low to no oil pressure. As soon as I tap the throttle it spikes back up. Could that by my HPOP, oil pump, oil cooler? I am doing studs and gaskets next month...and the truck isn't being driven.

I guess I am hoping oil coiler over HPOP or pump...thoughts?

Also, will new gaskets fix my heating and cooling issues?

Oh, and my oil temps were spiking my last drive.
