Coolant temperature seems strange

Hey guys, first off I'm changing my oil cooler this weekend, but have noticed my coolant temperature when I'm just idling is 179 and when I'm driving around it can get as high as 205. The bonehead that I bought this truck from filled the coolant with just water. But when I change the oil cooler I'm thinking about changing the thermostat too. Starting to think it doesn't have a Tstat in it because of the varying temps. And thoughts?

if he is dumb enough to use straight water, he is dumb enough to pull thermostat for sure. new one is cheap, and can't hurt. 180-205 is not bad though. It will vary depending on how hard you are pulling and ambient temperatures
