High coolant and oil temps *help*

Went to pull my dads 20ft enclosed trailer for the first time today and hit some really high temps in a short distance.... I went about a total of 10 miles and went from about 194 coolant temp when I hooked up to 250 (oil an coolant temp) by the time i got home, and I even made a 10 minute stop in between and did about 3 miles of freeway driving at about 60mph. I did not hear the fan kick in at all so I am thinking tat is part of the problem but thinking the water pump is maybe going also? Truck has 245000 miles but the oil cooler was just replaced along with an egr delete and head studs. Trailer only had about 750-1000lbs of wood in it so the truck wasn't working that hard to pull it, and I know many pull much heavier than this. Also outside temps were about 85 degrees. What dou you guys think? I plan to do some pulling with this truck so wan to get it sorted out ASAP.

Still not sure what the problem is...but took the truck for a 30 mile freeway drive yesterday just to see it it would act up while being unloaded and the temps seem fine. Averaged about 194 coolant temp and 200 oil temp. My cousin keeps telling me he thinks its the water pump failing but don't want to go through the hassle of replacing to find out that wasn't the problem. Anyone have some insight?
