Temp guage fluctuating????

07 6.0 69000 miles Egr delete,new oil cooler, new fan clutch, new thermostat, radiator flush!!! This truck getting on my last nerve everything u turn around something else pops up!! Pulling my camper truck will go up to 230 plus with the heater on it will do it sometimes just not as bad u drive it normal it's fine tonight comming home from work 5hr drive it was fluctuating from 180 - 216 dun it a bunch this morning after bout 3 hours it finally leveled out to 186 - 190 degrees eot and ect stays less than degrees apart!!! Would the water pump or temp senser making it over hear and not communicating with the clutch fan!! I have all this questions but dont no the answer any input would be great thanks!!

if you removed the EGR valve, it will cause the fan to not operate properly (or so ive been told). best thing to do is use a programmer to turn off the EGR, or leave the valve in and plugged up. on the 05 and up, you had to do this, or risk overheating.
