random shut offs and coolant

05 6.0 studded deleted powermax turbo coolant filter and intake. But my truck will randomly shut off but will fire right up sometimes it throws the engine light and sometimes it dont. But I can never get a scan on it cuz I'm driving down the road and can't pull over. What could it be? And also when I go to get on it coolant comes out not a lot but it was just studded.... Also could no thermostat cause pressure like this cuz my truck don't have one??

Also my truck never over heats or smokes in any condition

You need this.....Write Up: Monitoring the 6.0L PSD.
Without it, we're just guessing.

Tonight after driving coolant had foam but undone the cap and it didn't boil out
