Got gauges, what should temps be

I just got a set of gauges for my truck. What is normal and what is considered as high in my tranny temp, eot,ect? Also, do I need a egt probe. What is benefit of reading of egts?

i just made a 1200 mile round trip and never shut the truck off...... ambient temps were 100, truck was unloaded, and i saw 170 trans, eot 206, and ect 195. i was driving 85mph from southern missouri to southern louisanna.
