Runs hot occasionally. Eric?

I have eric's extreme street on the truck as my dd. It doesn't do it all the time but every now and then it'll run a little hot on ect. When I say hot I'm talking 200 but it's not all the time and really there's no reason for when it does. The truck has been egr deleted and I've read that by doing this the fan wouldn't engage the same as it used to. It's never been an issue til this tune. I have my egr valve plugged in and it never threw a cel. I'm wondering if because eric gave me a egr deleted tune, which is what I want, if that's messing with my fan engagement? Obviously any other thoughts are appreciated as well. Put a new thermostat on not very long ago.

Have you tried any other tunes?? Does your device have any canned tunes to try and see if it still persists?? And just to confirm, it runs completely normal with the stock tune on it.

What does it run at normal say driving 55 for a while? I heard of people having problems with there fan only if egr isn't plugged in
