First to check the turbo, I'd spin the turbine and feel the bearings spin smoothly. There shouldn't be any rough or grinding felt through the wheels. Check the wheels for play in all directions, including parallel play. Check the compressor wheel condition, the blades should be in good condition, any nicks and wear will show as a result of the turbo taking in debris. Also, check the threads on the bolt holes to make sure they are still in good shape and not stripped. You can always remove and clean the solenoid and check the actuator piston. You can also disassemble the exhaust housings and check the vanes and unison ring for any wear. In most cases the exhaust housing, vanes and ring can be all cleaned. Check the housings for any obvious signs of problems. Might want to replace the O-ring on the compressor housing if you open that up tho.
You don't need the oil line for the 03 turbo. Your 05 will be fine. Although the drain pipe was different in the 03 turbo, so you might want to double check that, but I'm sure you can reuse your 05 drain pipe. Replace all 0-rings and gaskets.
To answer your last question, the 05 pedestal will work with only two bolts, leaving the one in the back of the turbo out. Personally I wouldn't do that, but people have and it works.... maybe with some lock-tite on the two bolts, but that would sure be a pain when it came to removal. I'd try to find the 03 pedestal as I think the 03 turbo sits a lot better in its original pedestal.
