I have had the EXACT same thing happen on my 2005. Once every 3-4 months. Only a few times. Never did anything about it except to turn off and re-start truck. Interesting...

Had the same problem with my 05 stopped working 3 times , Dealer replaced the control unit no problems yet

my 05 xlt with standard heat controls blows out of the defroster for a minute than blows out of the vents. There also is a vacuum pump on the right side next to battery that makes a terrible noise. Sometimes it stops,sometimes runs the whole time the truck is on. Anybody with that problem? the pump would be easy to change, but not sure thats the problem or not.

some of the fords have a control board. most of the time all you have to do is unplug it and plug it back in.

I have A 05 Super duty an are climate control was blacking out just the same as yours
an then are defrost got stuck on. So we took it to the dealer an they replaced a fan sensor an it hasn't blacked out since.

If your defrosters are all that work in both AC and Heat mode. It can be a relatively easy fix. On my 04 there is a vacume pump on the right side inner fender well. When I tapped on the unit it came on. So pulling it apart there is a set of points and an adjustment screw inside. Turn the screw an 1/8th of a turn or clean the points and you are up and running. Hope this helps. Ed

Next time you start your truck and the control panel doesn't turn on, try turning your lights on and off. I have had this problem with my 05 and I used to just shut the truck off and wait a few minutes but one day I just turned the lights on and off and the control panel started working again.
