High oil/water temps

Yet another chapter in the never ending 6.0 pos saga Ive got.I was wondering at what oil/water temp do I need to be concerned.Towing a small enclosed trailer maybe 3k lbs at 65 mph my oil was running 225 water was 213,granted it was about 96 degrees out but this has me worried this thing will need more work AGAIN, Seems to me thats a bit high?

I was having issues with no power/boost so this past March I did a Sinister egr delete,Bulletproof 58 volt FICM,new Ford oil cooler, blue spring upgrade, updated turbo feed and drain lines, rebuilt the turbo with a billet wheel,Mishimoto radiator and intercooler piping.Im running Cat elc coolant.Still have no power, but at least gained a bit of boost.Im at my witts end here.

Any help/tips greatly appreciated.

I wouldn't worry about those temps at all. The truck will go in to limp mode when the oil hits 251*. You weren't even warm enough to turn the fan on

The fan doesn't turn on until coolant temp is above 219*. I had my oil yelp up around 250* before doing my cooler.
