Coolant leak

Been looking frequently as a guest on the site. Finally joined b/c now ive got problems. 03 f350 with egr delete and arp head studs installed already but now im thinking ive got issues with the gaskets or heads. Had a reputable shop in houston do the work. Heads were checked at machine shop. Here's my issue. Ive noticed ive been missing coolant here lately. No visible leaks. I did the test with a T tied into the cooling system and watched the gauge. The gauge would rise pretty quickly and when in the throttle, would hit 16 psi. Normal driving is about 12 psi. Any comments or opinions to help me justify not pulling the heads?
