Low Oil Temp ????

I replaced my oil cooler and deleted egr cooler and recently did the HGs and ARP studs. All has been running great, with a temp delta of 2-6 degrees, EOT being higher than ECT.

This weekend on my trip home from GA, I noticed my oil temp was reading low. My coolant was fine, but the oil temp stays about 8-10 degs cooler than my ECT. I've reset my Edge CS, changed parameters, changed my SCT tune, but it continues to be this way. The temps both match at ambient temp and climb normally, ECT coming up first as usual. But as I get to operating temps, the EOT slowly drops.. Both temps move together, just 8-10 degs off, EOT staying lower. Is there any scenario that this can happen without a bad EOT sensor??? I've attached a pic of my CS at idle after I've stopped and parked.
