EGT and Turbo questions

I was wondering what normal EGT should be when cruising. My truck sees 800 850 at 55 mph. I do have 38 inch swampers. Also what should my boost read? I usually only see maybe 5 to 10 psi. I can get the psi up to maybe 20 if I get on it off the line.

05 EX Cab Short
8 inch Fabtech
38 inch SSRs on 17x10 Centerlines(powdercoated)
SCT Innovative tunes
Banks CAI
Offroad MBRP Stainless 4.5 " and up pipe.
Auto Meter EGT, Fuel pressure, Trans Temp, Oil temp, water temp gauges.
Blue spring , bored 3 hole banjos.
ARP Studs
OEM Ford gaskets.
EGR Delete, cooler delete.
Bulletproof stand pipes
AMP Power Steps
Kicker Audio
Yukon 4.56 gears
Innovative 48v FICM Performance flash.

I'm thinking of making my MBRP into a straight pipe. Would this help the EGTs? It's already had the cat removed.

Should a stock turbo be putting out more than 5 psi while cruising? I only get about 18 psi when wide open. Any thoughts?
