rebuild rearend

After many, many, many hours of deliberation I am going to change out the clutch pack in my LS rear. I've heard that the bearing preload is controlled by shims. Question is how do you check the preload is correct when you get it back together? After 200k, simply putting it back together the way it was will probably not give the correct preload, I'm assuming some wear has been taken place and they will need to be adjusted when reassembling.
