That's not quite so. Modded 7.3's put out much better numbers to wheels than a stock 6.0 can, and they still hold up just fine. I bet there are more modded 7.3's with less issues than the same number of stock 6.0's. If your theory was true, then every newer engine would have issues like the 6.0 did, and that's just not the case. 6.4 is doing pretty well, but has been much less problematic than 6.0's.

Sounds like fun! I own a small painting and drywall business. Most of my work is painting though. Interior/exterior, mostly residential but I've done a little commercial as well. Sounds like you got it covered, but if you need any tips let me know.
