The best way to improve mpg is to ease up on the right foot. Your sweet spot is going to be around 1800-2000 rpms. A difference of 5 mph can easily mean 2mpg difference. If you know anybody with a good tuner you can reset your speedo. A good speed shop or off road shop can also do this for you.
