I agree with Cypher on this. Scott, you would be better off to travel some and put your truck on one of the reputable, dyno's at shops with diesel experience, or one of the travelling versions such as Dunbar's.
Most likely the sensor that the VW shop did not have was the rpm sensor that needs to be added to the vehicle to be able to calculate hp from the torque readings.
When things are working right, and little to no tuning is being done.. I don't see why a dyno shouldn't be able to process 3 to 4 trucks an hour, with three pulls per truck.
